Borsch

everyone claims to have invented it.  But I can assure you that it were the Ukrainians who really invented it.  In fact, out of all the versions I’ve tried, Ukrainian Borsch is the best Borsch in the world!

  1. jewish:  red water after a beetroot was boiled in it for a while.  served in a glass.
  2. polish:  sweet, red, see through, with dim sum kinda stuff floating on top. served cold.
  3. russian: there is a red and a green version.  green version is a poor’s poor man’s skimmed version of russian red version.  russian red version is a poor’s poor man’s skimmed version of ukrainian borsch.
  4. ukrainian:  oi, mama! a spoon should stand in it:
  • boil good bones from cow and pig for a few hours
  • add meet blocks and boil for another 2 hours
  • slice onions, garlic and fry until golden
  • add chopped bacon
  • add grated boiled beetroots and carrots
  • add chopped tomatoes & herbs: dill, parsley, oregano, bay leave
  • reduce to a pasty texture
  • take out the bones from the boulion
  • add chopped potatoes and diced cabbage to the boiled meat 
  • add vegetables from the frying pan
  • add more fresh herbs and through in 2 garlic gloves and a tea spoon of honey
  • mix well together
  • leave it alone to slow steam for about 2 hours
  • eat next day (heat up)
  • add cold sour cream and freshly chopped dill on top

voila!

Seriously … you should taste it!

Personally, I am not big on chocolate at all and would always prefer a steak. But this chocolate is a must! Personal favorite - huzelnuts in caramel coat dipped in dark chocolate …. And it is not a mass production, it is indeed handmade and you can even watch the process. Finally, it is a nice thing to bring for your loved ones!
